Eating vegan in Frankfurt — the Ethiopian answer
Ethiopian cooking was vegan long before there was a word for it. Why that has to do with the fasting calendar.

In many kitchens the vegan dish is a side that was promoted to a main course. In Ethiopian cooking it is the other way round.
The fasting calendar
The Ethiopian Orthodox tradition observes many fasting days across the year, on which no animal products are eaten. Over centuries this produced a complete plant-based cuisine in its own right — not an absence of something, but a craft of its own.
What arrives on the platter
Misir wot of red lentils, shiro of roasted chickpea flour, gomen of collard greens, atkilt of cabbage and carrot. Together on one injera they make a platter that satisfies without sitting heavily.
